This has about 500 calories, 45 grams of carbohydrates, 25 grams of fat, and 35 grams of protein (for one serving).
Ingredients (for one serving):
- 1 Flour Tortilla
- 2 Eggs
- 3 oz Turkey Bacon
- 2 Tablespoons shredded Mozzarella
- Spoonful pickled jalapenos
- 2 Tablespoons Avocado Oil
- 1 Whole Avocado
- 2 Tablespoons Cream Cheese
- 1 Lime
- Salt & Pepper
Instructions:
1. First, dice the turkey bacon and jalapeños to prepare your ingredients for cooking. Combine eggs in a bowl and add salt, pepper, and mozzarella cheese.
2. Heat about a tablespoon of avocado oil in a cast iron pan over medium high heat. Add in your diced turkey bacon, and once browned, the diced jalapeños. Once you can smell the jalapeños release a strong smell, add in your eggs with mozzarella. Stir using a spatula until cooked to your liking.
3. In the meantime add avocado, cream cheese, lime juice, salt, pepper and garlic powder in a bowl and mix with a fork until it turned to a chunky paste. If you want, you can add a bit of hot sauce too for extra flavor!
4. Lightly heat your tortillas, and then spread the guacamole on top of the tortilla and lay the tortilla beside your pan. Add a spoonful of the egg mixture, and fold into a burrito. To do this, I like to pinch the left and right sides, and then start rolling from the top. If this is confusing, I found it helpful to watch a quick YouTube tutorial to clear it up.
