Hi Everyone! This is sort of a special post for me, because my grandfather is Lebanese, and this is my first time making a Lebanese dish. Halloumi was created originally in Cyprus, but was popularized in Lebanon. For those of you who don't know what this even is (don't worry, I didn't either at first), it is a type of cheese that has a high melting temperature so you can make it crispy without it melting. This dish is super cheap and delicious, as well as quick to make, so I hope you guys enjoy!
Time: 20 Minutes
Servings: 3-4
INGREDIENTS:
- 3 tablespoons extra-virgin olive oil ($0.50)
- 14 ounces halloumi cheese (cut into 1 inch cubes) (~ $4.99 but this depends on your location)
- 2 cups fresh corn kernels (canned is ok) ($1)
- 2 cups halved cherry tomatoes ($4)
- 1 jalapeño, thinly diced ($0.5)
- 2 teaspoons cumin seeds ($1)
- 1 teaspoon kosher salt (Diamond Crystal), plus more to taste ($0.10)
- 1 bunch basil ($3)
- 1 lime, cut into wedges ($0.50)
- Black pepper
Total = $3.90
Instructions
In a large skillet, heat 2 tablespoons of olive oil over medium high heat. Sear the halloumi for about 2 minutes per side or until golden brown
2. Add remaining 2 tablespoons oil to the pan and heat it over medium-high. Add corn, tomatoes, jalapeño, cumin seeds and salt, and cook until corn and tomatoes have softened and everything looks juicy, about 10 minutes.
3. Remove pan from the heat and stir in the browned cheese and basil. Squeeze a lime wedge or two over everything and season with more salt and lots of black pepper. Garnish with more basil and serve immediately. If it has cooled, heating the cheese is an optional step because I like it best when the cheese is soft and melty on the inside!
